Cross Cultures Presents… Asia’s Best Female Chef 2019 Garima Arora of Gaa (Sept. 3 & 4, 2019)

Hi guys! It’s been a while since my events platform Cross Cultures had an event in the Philippines but on September 3 and 4, 2019, we will be having Asia’s Best Female Chef 2019 Garima Arora of Gaa in Bangkok (No. 16 on Asia’s 50 Best Restaurants list– the highest new entry for the year!!) taking over Discovery Primea’s Flame Restaurant, in partnership with Thai Airways and Moet Hennessy Philippines, Inc. 

Garima, born in Mumbai, is also the first Indian woman to receive a Michelin star— when Gaa was awarded at the 2019 Michelin Guide for Thailand. She worked briefly as a journalist before pursuing her interest in the culinary arts. After graduating from Le Cordon Bleu Paris in 2010, she worked at Noma in Copenhagen, learning alongside René Redzepi. In 2016, she was appointed sous chef at Gaggan, the award-winning Bangkok restaurant which has held the No.1 position on the Asia’s 50 Best Restaurants list for four consecutive years.

In April 2017, Garima opened Gaa, a three-story restaurant that celebrates a modern tasting menu using traditional Indian techniques. The result is a dining experience that is modern, innovative and playful.

Trivia: Garima has actually cooked with Cross Cultures in 2015, when we brought Gaggan to Manila for a four hands with Gallery by Chele– and we are so excited to be collaborating with her again!

For the price of P6,500++ guests can enjoy a 10-course menu prepared by Garima and the Gaa team, paired with Veuve Clicquot champagne and Cloudy Bay wines.

Here is the menu– most of which are Gaa signatures; however Garima and Gaa R&D chef Samantha Jumchai (who is Filipina!) are interested in cooking with Filipino ingredients as well:

-Chilled soup of pink guava
-Betel Leaf crisped with duck stock
-Duck doughnut with keema filling; Duck tongue glazed with tamarind served with coriander stems, onions and sev
-Chicken liver on Toast
-Grilled young corns with corn milk
-Manila clams and mussels dressed with a Koji beurre blanc
-Talangka and fresh salad over and Indian flat bread (khakra)
-Koji bread with caviar and banana water
-Grilled pork belly served with pomegranate, onion and coriander
-Burnt coconut sugar ice cream served with pork floss
-Chocolate betel leaf
